What should I check before buying a Korean fried chicken franchise?

Check whether the unit’s fryers and ventilation can handle the double-fry process at peak, what the franchisor requires you to buy for sauce and batter, how much of the trade is delivery apps, how the late-night hours perform, and what current franchisees say. Leave disclosure questions to a franchise lawyer.

A Korean fried chicken unit runs on a set method, set ingredients and quick service. That makes the franchise easier to learn, but it also means a buyer inherits the brand’s rules. Before you go further, collect the franchise documents, ask the franchisor what its approval of a new owner involves and visit the unit at its busiest.

Double-frying, fryers and ventilation

The double-fry method needs fryer capacity and good extraction. Ask how many fryers there are, their age and whether the unit keeps up at peak. Ask the landlord and your adviser whether the ventilation meets the brand’s standard, because upgrades can be a large and surprising cost. Request the maintenance and cleaning records.

Sauce and batter from the franchisor

Most systems require sauce, batter or seasoning from the franchisor or an approved supplier. Ask what the unit must buy, how pricing changes are handled and what happens if supply is late. Read the supply terms with your lawyer. A tied supply chain can be reliable, but it limits what a new owner can change.

Delivery apps and late-night trade

Fried chicken sells heavily through delivery apps and late evening hours. Ask for sales by channel and by hour. Delivery platforms keep a share of each order, and late-night staffing costs more to manage. Compare what the books say with the point-of-sale reports. Our page on franchise or independent restaurants sets out the broader tradeoffs.

Ask the franchisees

Speak with current and former franchisees, not only those the franchisor suggests. Ask about support, training, how disputes were handled and whether the unit’s results match what they expected. Ask a franchise lawyer what the franchisor must give you before you commit and what rights you would have.
