Which parts of a bowling alley’s snack bar are worth a close look before buying?

Look at the kitchen equipment, the food and drink margins, the suppliers and the staff who run it. A snack bar can be a side business inside the alley, so check how much it adds, how it is staffed and whether its equipment and permits transfer with the sale.

Begin with the numbers. Ask whether the snack bar’s sales are recorded separately from lane revenue, and compare costs of goods against sales over several seasons. If sales are not separated, ask the seller to explain how they know what the counter really earns.

Then walk the kitchen. Fryers, coolers, ice machines and ventilation all wear out, and a failing fridge in the first month is an unpleasant surprise. Ask for service records and who maintains the equipment, and how quickly repairs happen. Find out which items are owned and which are leased from suppliers.

Ask about supplier arrangements. Some alleys have agreements with beverage or food suppliers that include equipment loans, exclusive terms or rebates, and you will want to know whether those agreements carry over to you. If the bar sells alcohol, ask your lawyer what approvals the new owner must obtain. Finally, consider who does the work. A snack bar that runs on one cook’s knowledge is vulnerable if that person leaves. Ask about recipes, training and how much the owner personally handles at busy league times, and ask whether someone else already knows how to open, order and close.

Key takeaways

  • Ask for snack bar sales and costs recorded apart from lane revenue.
  • Check kitchen equipment condition, service history and what is leased.
  • Review supplier agreements and confirm with a lawyer whether they and any approvals transfer.
