How do I tell if a pizzeria relies on the owner’s own hours?
Ask the seller to walk you through a full week: who makes the dough, works the oven at the dinner rush, drives deliveries and answers the phone. Then watch the shop during busy hours. Every job the owner does that a paid employee does not is a job you will have to do yourself or hire for.
In a pizzeria the owner’s hours often hide in plain sight. The seller who opens at dawn for dough and closes after the late rush may be filling three roles for one salary. Before you decide, work out which jobs the owner does and what it would take to cover them without that person. These steps help.
Ask for a week, hour by hour
Ask the seller to describe a normal week, including prep, service, ordering, cash-up and paperwork. Ask who covers when the owner is sick or away. If the answer is always the owner, the business depends on that person. Ask whether staff can cover easily. Compare the answer with the payroll records, and ask a second person on the team the same questions to see whether the accounts match.
Spend time in the shop
Ask to visit during a dinner rush and again on a quiet morning. Notice who is on the line, who handles the phone and who steps in when something goes wrong. Ask if the sale can be kept quiet from staff and customers during these visits, and let the seller decide how to introduce you.
Cost out the gap
List every task the owner does and decide which you would do and which you would hire for. Take that list to your accountant, who can show how the hires change the results. Our page on what buyers weigh when pricing a pizzeria covers the other factors, and how to tell if a pizzeria is profitable covers the books.
